Chef Nathan Lingle is serving up a three-course champagne dinner for a night of lavish revelry. Firsts include oysters with apple and Riesling jelly, and lamb tartare with quail egg. Second courses include lobster bisque with croquet and truffle, while third course features are guinea fowl and dry aged beet “Pot Roast”. Priced at $125 per person, or $155 with optional champagne pairings, vintages include Perrier-Jouet, Grand Brut and Henriot Brut Vintage. After dinner enjoy live entertainment in the Living Room with more champagne served by the glass or bottle.

2 Galaxy Taco
Starting with a welcome Cimarron Blanco Tequila margarita or draft Benchmark Galaxy Corn Lager, say saludos to a suitably Mexican-themed New Year with a special three-course menu from executive chef and partner Trey Foshee. Highlights include grilled persimmon salad, adobo grilled half chicken and chili braised beef short rib birria, plus tamal dulce to finish. In addition to the prix fix, which costs $48 per person, Galaxy’s entire menu is also available a la carte. Due to liquor licensing constraints a complimentary glass of bubbles can be enjoyed during the 10 p.m. D.F ball drop.
